| Prawns with mixed vegetables
Step 1
Ingredients
- Fresh coconut – 1 cup (grated)
- Shallots – 5 nos
- Cumin seeds – ¼ tsp (optional)
Preparation
Coarse grind all the above ingredients and keep aside.
Step 2
Ingredients
- Plantain(raw) – 1 no (chopped into 1 inch long thin pieces ,keep it in salt water for some time to remove the starch and avoid any color changes)
- Coconut oil – 1 tsp
- Prawns – 500 gms
- Turmeric powder – ½ tsp
- Raw mango – 1/3 of a medium mango/1 big slice (chopped)
- Drumstick – 1 no (cut into 1.5 inch long and slit)
- Green chilli – 4 to 5 nos (slit)
- Curry leaves – handful
- Water – ¼ cup
- Salt – as needed
Preparation
Grease a pot with coconut oil. Add all the above ingredients except coconut oil and mix well. Cover and cook well over low flame. Gently stir in between. When it is half done, add the ground coconut mix (step 1) and cook till no water is left. Turn of the flame and pour the coconut oil. Add some curry leaves and the Prawns aviyal is ready to be served.
